The process of making paneer tikka starts with spices and yogurt first and it wouldn't be wrong to say that the taste of paneer tikka is very much dependent on the quality of the marinade.
To make a spicy and mouth watering paneer tikka, you will have to first create a good marinade. You can create a marinade as per your taste by reducing or increasing the spices. In your recipe we will add the following to our marinade. Also, we will strain the marinade a few hours before we add spices to it.
1. Greek Yogurt
2. Spices such as Coriander power, Black pepper powder and Hot sauce to taste
3. A few drops of mustard oil for tangy flavor
4. Also a few drops of lemon juice to increase and add to that tangy flavor
5. Add a few leaves of mint for the rich mint aroma
Once you have mixed all these together, let the pieces of paneer, bell peppers and tomatoes sit in the marinade and soak the flavor of the spices we put together in the dish. Afterwards when you feel like the paneer cubes and other slices have soaked the rich spices, then arrange all these on a skewer in a way that these pieces shouldn't be dripping the marinade. Instead there should be a thin layer of marinade covering all the pieces.
You can also skip the skewer if using the oven. For the paneer cubes apply a little drops of oil directly onto the paneer cubes, and bake them for 2-3 minutes in the oven until the paneer cubes looks charred.
